Cheese Cookies

Ingredients

3/4 cup crumbled soft paneer
1/2 tsp salt
1/2 tsp baking powder
1 cup plain flour
1 tbsp lemon juice
1/8 tsp nutmeg powder
1/8 tsp cardamom powder
1 egg, lightly beaten
3/4 sugar
5 tbsp butter, softened
1/4 cup crushed almonds


Method

1.Beat butter and sugar, till light and fluffy
2.Add egg and lemon juice, beat well
3.Add flour, baking powder, salt, nutmeg and cardamom
4.Add paneer
5.Beat till it well blended
6.Add almond, mix it well
7.Form small flattish rounds
8.Preheat oven
9.Place some biscuits at a time on a baking sheet
10.Place far apart enough to allow the biscuits to expand
11.Bake at 150oC for 15 minutes or till light brown
12 Cool well before removing. Store in airtight jars

Bunny Vanilla Cake

Ingredients

4 egg whites
1/2 cup margarine
2 tsp vanilla essence
1/2 cup milk
2 cups plain flour
2 tsp baking powder
1-1/2 cup sugar

For Frosting: 2-1/2 cups powdered sugar
3 tbsp water
1/4cupbutter
2 tsp vanilla essence

For Decoration: 1 cup jelly beans
2 tbsp cherries

Method

1.Cream margarine and sugar till light and fluffy.
2.Beat the eggs and gradually add to the mixture.
3.Add the flour, sifted with baking powder.
4.Blend the batter well.
5.Stir in the milk so that the mixture becomes even and smooth.
6.Grease two round cake tin (8\\\")and grease it.
7.Pour the ready cake mixture in to two trays.
8.Bake in a preheated over at 350o F for 25 minutes.
9.When the top is golden in colour, take it out from the oven.10.Cool the cake for 15 minutes.11.Remove the sides of the pan and cool completely.

How to Give Shape:

1.One cake is for the face
2.From other cake, Cut a curved scoop from both the sides of circle, the remaining portion is the bow tie
3.Place the cut three pieces near the first cake
4.And the shape of bunny is ready, see the diagram

Method of Frosting:
1.Mix 1 cup sugar, vanilla essence and butter
2.Beat well
3.Alternatively add some sugar and some water, beating continuously
4.Beat till smooth, and frost is ready

How to decorate:

1.Frost the whole bunny
2.Can use cherries a eyes
3.Pink jelly as nose
4.Decorate the bow tie and ears as per your imagination

Shortbread

Scottish recipe for shortbread here. Yum Yum!

Ingredients
175g of self raising flour
50g sugar
100g butter
Ground rice for sprinkling

Method
1. Cream the butter and sugar until the mixture appears to go white. The slowly add the flour.
2. Mould the mixture into a ball shape, then remove and dust with the ground rice.
3. Press the ball into an 8 inch tin and smooth over. Next make small pinpricks in the mixture.
4. Bake in a pre heated oven at 160c, (325f or gas mark 3) for around 25 minutes.
5. Take the tin out of the oven and dust with caster sugar. Then cut into 12 fingers
6. Cool for 15 minutes in the tin, then place in a rack until it has competely cooled.

Serves: 12 fingers

Preparation time: 10 mins

Cooking time: 25 mins :D

Oh I am liking this thread very muchly :D :D :D They all sound lovely and very tempting :lol:

This is a recipe for Orange cake that I heard about I have not tried it because its made with oranges and sadly thats a no no for me but it sounds lovely, I saw a pic from someone that has made it and it looked so yummy :D


Orange Cake.

Cake mixture..
4oz butter 4oz marge 2eggs
1/2 pint fresh orange juice
10oz sugar 14 oz SR flour..
Topping...
6 round tablespoon icing sugar
3 round tablespoon orange juice

7x10 inch roasting tin needed,

Method
Melt fats gently-add juice ,eggs +sugar.Lastly add the flour
Pour mixture into tin Gas 4 or around 160C for about 1hr.

Mix topping ingredients together -pour over the cake whilst still hot.

When cold,cut into squares. This will keep for 2wks if kept in an airtight container.

Kenyan Samosa

Ingredients (6 servings)

1/4 lb Ground round (beef)
1 Clove, garlic, minced
1 sm Chopped onion
1 1/2 ts Active dry yeast
2 c Bread flour
1 ts Salt
1/4 Tsp.ground cumin
1/4 Tsp.ground cardamon
1/4 Tsp.ground cloves
1/4 Tsp.grated nutmeg
1/4 Tsp.ground cinnamon
1/4 Tsp.ground black pepper
3/4 c Water
1/4 c Frozen green peas

Instructions

Braise or saute the beef til browned. Add garlic and onion. Cook til softened. Let cool.
Put the whole mess, except the peas 'inna you bread machine (in whatever order you like best) (no snitching and eating 'da peas)
Dump peas into the machine at the end of the first kneading or at 'da beep.

Mango Lassi - (Yogurt Drink)


Description:
Try this recipe in the summers when you need coolness of lassi and also mangoes are there.

Ingredients:

1.00 cup mango, diced
1/2 cup Orange juice (chilled)
3.00 tablespoons honey, pure
2.00 cup milk, rich (chilled)
1.00 pinch of rose petals (optional)

1. Combine mango, orange juice & sweetener in food processor.

2. Blend for 1 1/2 minutes.

3. Pour milk into processor & mix it until it has expanded & become frothy.

4. Add the mango puree. Process for about 1 minute.

5. Pour into chilled glasses. Garnish with the rose petals if you want.
